The highly valued Australian truffle industry is celebrating its 21st anniversary this year. From the country's first truffle, harvested in Tasmania in 1999, the annual national harvest has grown to become the world's fourth largest producer of the most-prized type of Black Truffle - the French Black or Périgord.
Considered to be the finest grade of Black Truffle, Australia is predicted to become the world's foremost exporter of Périgord truffles within a decade.
As premium products go, few can surpass the taste of the Périgord black found in the southern forests of Western Australia, northern Tasmania and Highlands of Victoria.
The Australian Périgord black is marbled with an aroma of forest undergrowth and damp earth mingled with roasted dry fruits and is harvested in autumn and winter, the season runs from May until mid August.
Aion through its partnerships with local producers follows the Australian growing cycle, using the early season product from WA, before switching to Tasmanian, Victorian and then Canberra region, to round out the short winter season.
