Rocklobster

Rock Lobsters are Australia’s most valuable wild fishery, long regarded for its premium quality by consumers across Asia and the Middle East.

Australia's vast fishing zone is one of the world’s largest, covering an area of 8 million square kilometres, and is home to four species of Spiny Lobster, most prominent of which are the Southern and Western Rock Lobsters.  

The Southern Rock Lobster is the most prized by culinary circles and is found in the cool waters of the Southern Ocean. The cold temperatures mean that the they grow a little slower to maturity than other varieties, resulting in a more tender and flavoursome meat. 

The Western Rock Lobster off the coast of Western Australia are the most popular by volume and account for approximately 60 percent of the Australia's exports. 

Australian Rock Lobster fisheries were the first in the world to be certified as ecologically sustainable by the Marine Stewardship Council, and are widely recognised as one of the most effectively managed ecological fisheries in the world.
