Famed for its taste and rich in omega 3 fatty acid, Southern Bluefin Tuna sourced from the Great Australian Bight is well-known for its high-quality o-toro and chu-toro fatty cuts favoured by sushi and sashimi chefs. 


Australia’s Southern Bluefin Tuna industry incorporates aspects of both wild-capture and aquaculture through a technique pioneered in Port Lincoln where wild Southern Bluefin Tuna are capture live in the Great Australian Bight between December and March and transferred to Tuna farming zones restricted to wild fish near Port Lincoln for fattening and harvesting.


A strict program of zones, quotas and licensing has seen the development of a sustainable Southern Bluefin Tuna industry which has grown over the past 30 years to now become one of the most important seafood sectors to the export market.  


Ranched Southern Bluefin are fresh air freight harvested between March and September, the frozen harvest is shipped by freezer boats from Port Lincoln in July and August.
